Paleo Crispy Chicken Tenders and Make It Monday Link Up

One thing that we definitely miss on our paleo/primal diet is crispy chicken tenders....especially the kids. I recently found a great alternative though and they are delicious.

Paleo Crispy Chicken Tenders
Serves 4-6

Ingredients:
-1 pound boneless, skinless chicken tenders
-1 egg, whisked
-1 cup unsweetened shredded coconut
-1/2 cup almond flour
-pinch of salt
-coconut oil, for greasing pan
-Sauce for dipping

1. Preheat the oven to 350 degrees.
2. In a bowl, whisk the egg.
3. In another bowl, mix together coconut, almond flower and salt.
4. Soak the chicken strips in the whisked egg, then dip them into the coconut mixture. Coat well on all sides then put them onto a plate.
5. Place a large pan over medium heat and add a tablespoon or two of oil to the pan. Once the pan is nice and hot, add the strips to the pan and cook for about 1 minute on each side.
6. Place the strips onto a baking sheet and place them in the oven for 10-12 minutes or until no pink remains. You will need to flip them a few times during the baking to make sure both sides crisp.
7.  Let them cool before serving.

I highly suggest dipping them into you favorite dipping sauce. I mixed Dijon mustard and maple syrup together to make our dipping sauce.

Voyage Around The World

Last week our homeschool group had our annual geography fair. We really enjoy doing projects like this with our group. It is so much fun and a great hands on way for the kids to learn about different countries and cultures. In one day we were able to take a voyage around the world to visit about 12 countries. If you are part of a homeschool group I highly encourage you to set up a geography fair.

Our family chose to do England, another country that I had an opportunity to visit with People to People Student Ambassadors. Before we started learning about England I dug out my photo albums and keepsake box which the kids had a blast digging through. They were full of questions and wanted to know all about the trip I took in 1999.

After they were done exploring we utilized many of the books that I purchased during my travels as well as several from the library to learn all about England. Then we put on some Beatles music and sorted through my keepsakes. The kids picked out the postcards, brochures, souvenirs, coins, and photos that they wanted to include on their board. I went online and printed the map, flag, crest, crown jewels, national animal and flower. I printed these items in black and white so the kids could color them in...really making the project their own. We also printed a colored photo of Queen Elizabeth II and the native animals of England.

Last year when we did our Australia project we had a lot more text on our board, but because of the age group that generally attends we decided to include more visuals and less text this year. The text that we included was very simple and in a bulleted format. We included the names of some famous scientists, artists, authors and singers. As well as various facts, British words and information about the climate, holidays and type of government. And of course no project is complete without a Lego sculpture. Rowyn's task was to build Big Ben! He did a fabulous job and Gwyn helped him with the clock face.


For our authentic dish we choose to go with shortbread cookies and tea. Gwyn made the cookies all by herself and they turned out great. They were a huge hit with all of the kids.

Here is the recipe we used:

Shortbread Cookies
Makes about 2 dozen

Ingredients:
-2 cups of softened butter
-1 cup of sugar
-3 teaspoons of vanilla
-4 cups of flour

1. Preheat the oven to 350 degrees.
2. Cream the butter and sugar until fluffy. Then stir in the vanilla, add the flour and mix well.
3. Roll out the dough and use a cookie cutter to cut the cookies.
4. Put the cookies onto a baking sheet and bake for 10-12 minutes.
5. If you choose melt some chocolate chips and dip half of each shortbread cookie into the melted chocolate. They taste great though with or without chocolate.

Each family spent lots of time preparing their display boards, costumes, authentic dishes and even dances. It was amazing to see how unique each one was. During the fair each family got a chance to talk about their country and share their board. All of the kids did a fabulous job and we all learned some really great facts about some really amazing destinations!


To enhance the learning experience even more I made my kids their very own passports. I used this FREE passport printable from Guest Hollow. I laminated the front and back cover to make it sturdy. And on inside the kids filled out their passports and pasted a photo of themselves. At the geography fair they wrote or drew pictures in their passports as they visited each country. I was very pleased with how these turned out and even more pleased at how great the kids did with filling them in.

Paleo Zucchini and Ground Beef And Make It Monday Link Up

I made this yummy zucchini and ground beef meal a few weeks ago and it was a huge hit with the family. If you like Italian dishes then this is one you will definitely need to try. It is inexpensive, quick and easy to make!

Paleo Zucchini and Ground Beef
Serves 4-6

Ingredients:
-1 lb ground beef
-2-3 tomatoes, chopped
-2-3 zucchini, sliced
-1 onion, chopped
-2 bell peppers, chopped
-1 tbsp onion powder
-1 tbsp garlic powder
-1 tbsp italian seasoning
-1/8 tsp pepper and salt
-1/8 tsp basil
-10 mild or hot peppers, chopped
-25 oz of your favorite tomato pasta or marinara sauce
-Parmesan cheese (optional)
-Mushrooms (optional)

1. Brown the ground beef in a large pot over medium, heat. Drain the fat.
2. Add tomatoes, zucchini, onion, bell peppers, mild peppers and spices and saute about 5-10 minutes or until vegetables are tender.
3. Stir in pasta/marinara sauce and simmer for about 10 minutes.
4. Top with parmesan cheese and mushrooms if you desire.

Paleo/Gluten Free Prune Brownies And Make It Monday Link Up

Is there such a thing as healthy brownies? You bet. Prune brownies. I made these a couple weeks ago and the kids loved them.

Paleo/Gluten Free Prune Brownies

Ingredients:
-1/2 cup of almond flour
-6 tablespoons of unsweetened cocoa powder
-1 cup of honey
-1/8 teaspoon salt
-2 tablespoons coconut oil
-1/2 teaspoon vanilla extract
-4 ounces of pureed prunes (I made my own using my Bullet)
-2 eggs

1. Preheat the oven to 350. Grease an 8x8 inch square pan.
2. In a medium bowl, stir the flour, cocoa, honey and salt together. Pour in the coconut oil, vanilla, prunes and eggs.Mix everything together, until blended.
3. Spread the batter evenly into the pan.
4. Bake for 20 minutes or until an inserted toothpick in the center comes out clean.

**If you are able to eat nuts you can add them on top prior to putting the brownies in the oven.

Chicken Kale Soup (Paleo) And Make It Monday Link Up

Last week I shared a quick and easy Paleo Chicken Noodle Soup. Well today I have an easy, Chicken Kale Soup recipe for you.  It was our first time trying kale and the entire family loved this yummy gluten free, dairy free, grain free soup. The flavors are absolutely amazing!

Chicken Kale Soup
Serves 4

Ingredients:
-2 tablespoons of olive oil
-2 large carrots, chopped
-1 medium onion, chopped
-1 lb boneless skinless chicken breast, cut into small bite sized pieces (I used leftovers from the whole chicken we had for dinner the night before)
-1 teaspoon of ginger
-1/4 teaspoon of ground cumin
-1/2 teaspoon of chili powder
-1 teaspoon soy sauce
-4 cups of homemade chicken bone broth (also made from the whole chicken we had for dinner the night before)
-1 bunch of kale, remove the ribs and chop the leaves
-Salt and pepper to taste (I used Adobo in place of salt)

1. Heat the oil in a large pot over medium-high heat until simmering. Add the onion and carrots and cook until they are soft. About 5 minutes.
2. Add chicken and cook for about 3 minutes. Add ginger, cumin, chili powder and soy sauce. Stir and cook for about 2 minutes.
3. Add chicken bone broth. Turn heat to high and bring soup to a boil. After it begins to boil, reduce heat to low.
4. Simmer soup on low for about 15 minutes.
5. Add chopped kale and cook for another 2-3 minutes or until kale is tender.
6. Season with salt and pepper to taste and serve it up!

Make It Monday - Valentine's Day Tissue-Paper Flowers

Today I have a super easy and inexpensive craft to share with you. These lovely tissue-paper flowers make a terrific Valentines bouquet, a pretty corsage, an adorable flower ring and even a tasty treat holder. I bought all of the supplies at Dollar Tree.

 

3 Simple Materials:
-Assorted colors of tissue paper
-Pipe cleaners
-Candy if you are making treat holders

3 Simple Instructions:
1) Cut 4 pieces of tissue-paper into squares. Size just depends on how big you want them to be. We made most of our large ones (with the exception of the ring) about 5-6 inches squared.
2) Put them in a pile and fold it like an accordion.
3) Tie the center with a pipe cleaner and then very gently pull each piece of paper apart into flower shape.


**If you want to make a tasty treat holder just glue a piece of candy or use a pipe cleaner to tie a piece of candy to the center of the flower. For the ring follow the instructions above but make the flower smaller flower and then make a ring out of the pipe cleaner to fit your finger. For some added fun you can even spritz the flowers with perfume to make them smell good!
