Paleo Sweet Potato Salad Recipe

Never in a million years would I have thought that sweet potatoes and spinach go well together. But guess what? They do! This meal was super easy and inexpensive to make plus it was delicious. Everyone even the kids asked for seconds!

Primal Sweet Potato Salad
Serves 4-6

Ingredients:
-2 tbsp olive oil
-1/4 tsp salt
-1/4 tsp black pepper
-4 large sweet potatoes, scrubbed and cut into 1" chunks
-2 large red bell peppers, cut into 1" pieces
-2 tbsp balsamic vinegar
-1 9 oz package of spinach or arugula, torn into bite-size pieces
-Crumbled bacon (optional)
-Grated Parmesan cheese or blue cheese crumbles (optional)

1. Preheat the oven to 425°F.
2. In a large pan, combine the oil, salt, and black pepper. Next add in the sweet potatoes and bell peppers and toss to coat them well. Roast, stirring occasionally, for about 40 minutes, or until the potatoes are tender. Remove from the oven and stir in the vinegar.
3. Place the spinach or arugula in a large bowl. Add the potato mixture and toss to coat.
4. Add crumbled bacon and cheese if you choose.
